BlackBerry Raspberry Cobbler! (Gf/low sugar/Partial Dairy Free Option)✨

Ingredients
3 cups fresh or frozen raspberries/blackberries (450g)
¼ cup granulated sweetener (or sugar if you prefer) (50g)
1 lemon zested (2 teaspoons zest)

For the Batter:
5 tablespoons unsalted butter (70g)
1¼ cups all-purpose gf/dairy free flour (or regular) (150g)
½ cup granulated sweetener (or sugar) (100g)
2 teaspoons baking powder
½ teaspoon salt
1 cup oat milk (or whole milk) (240mL)

Instructions
Preheat the oven to 180°

For the berries;
In a small bowl, stir together berries, sweetener, and lemon zest until combined. Set aside.

For the Batter:
Place the butter in a 8x8-inch baking dish. Place dish into the preheated oven until the butter is brown and melted (about 10 minutes.)

Meanwhile, in a large mixing bowl, whisk together the gf flour, sweetener, baking powder, and salt. Whisk in the oat milk until just combined.

Once 10 minutes is up, remove the baking dish from the oven, and pour the batter into the pan (don’t stir it).

Top evenly with the berries.

Bake for 45 to 55 minutes (until the batter is golden brown and a toothpick inserted comes out mostly clean.) Let the cobbler cool slightly before serving.

Serve with a scoop of vanilla ice cream and enjoy! ✨
